Amarascata
Amarascata is a jam of marasca cherries. It is the fruit cultivated and processed by Luxardo for distilling its renowned Maraschino, and for preparing, by infusion, the marasca liqueur named Sangue Molacco. Amarascata is well known on the artisan confectionery market, where it has been distributed for years for professional use (5,4 kg tins). The percentage of fruit used is extremely high in the Amarascata jam recipe: as much as 170 g of fresh fruit for every 100 g of fi nal jam. The percentage of added sugar is very low (<30%). No thickening agents of any type and no preservatives are used: the only ingredients are marasche and sugar.

It has a characteristic sourish taste, typical of the marasca (an acidulous cherry variety). Amarascata is not a normal sieved or passed jam, but is in large yet spreadable pieces. It well withstands baking in the oven, without boiling or staining the pan.

Taste it neat or accompanied by short pastry biscuits or cantuccini, and all confectionery products based on short pastry (tarts, barchette, etc.). As an ingredient in on plate desserts, ice-cream cakes and ice cream based on meringues. As a topping in traditional gateaux. Excellent in fruit pies.
